Mr. Blonde - Typically what guys do that chop tops is cut the brackets that the seats sit on (in our case) or in some rare cases, alter the floorpan so that the seat is somewhat recessed to make up some room.
As for if you could do it......it's like anything else. You can do *anything* to *any* car.....
