The engine load and air flow rate will cover some of those. Driving at a steady state (cruise control?) and turning on/off A/C and up/down with the windows on a straight stretch should measure changes. RE the DLC 7 pins, the data stream from the Local Area Network (LAN) is only 2 wires, add B+ and ground=4 wires. Haven't looked at what is on the others recently, but I'll let you know tomorrow from work. I may also be able to find out how fast the data is 'streamed', so you can compare against the report rate of the data logger.

The ABS reports wheel speed, but I doubt the vehicle "maintains speed" while coasting. Most manufacturers use decel (high vacuum, low MAP) to cut fuel delivery, helping MPG averages and emissions. I just wondered if the fuel trim would show A. true zero, B. a slight amount of fuel(less than idle) or C. about the same as idle, to keep the engine smooth and feed the cat enough to keep hot.
