I had that exact same problem, but it was a VW Bug. After everything warmed up, it had a tendency to stall and sometimes not want to start up. Turned out to be a fuel line problem routed to close to hot engine parts; caused bubbles (air pockets) which caused the stalling. Not saying that's your problem, but apparently something was done when they tore down your engine and it only happen when it's hot.
