I know that SEM makes a bunch of plastic paints in common interior colors. If you can get the right shade, it's as easy as removing the pillars and paint them. I would suspect that the sun is the culprit for the discoloration. Tinted windows would help, as well as being in a garage or using one of those funky windshield screens.
