Couple of reasons. First is cost, typically 4X mineral oils. You do make some of this up by less frequent oil change intervals (due to synthetic thermal stability), but not 4x as infrequently. The second is higher performance engines are the only ones that can benefit from high temperature stability. Anything that has an oil cooler on it generally needs some help, but the 2.4L Turbo added a cooler so that you don't have to buy synthetic. Corvette a few years back was able to eliminate their oil cooler and run with pure synthetic - but that was to avoid durability issues with their cooler. Kind of a judgement call on the manufacturer's part as to whether the added ownership cost is worth it.
