In case your car has ABS brakes, you will want to keep the tire and wheel diameter pretty close to stock. Otherwise, your ABS might not assist when you need it, particularly if the wheel and tire diameter are bigger than stock-- like you want to do. The ABS sensor will detect a slower than normal wheel revolution/second rate and will not assist.
In order to move to a bigger wheel diameter, you will need to use a smaller aspect ratio tire to compensate for the diameter change. If you keep the wheel/tire diameters pretty close, you will not need to change anything in order to keep an "accurate" speedometer.
