2005 turbo HO overheating sometimes

I have a 2005 PT turbo HO and only sometimes it gets hot. Stop and go traffic wont overheat. Stop and idle won't overheat. all day driving wont do it. Then all of a sudden overheat. Rev up the engine just a few RPMs a couple of times and the temp drops. Won't overheat the rest of the day.

I replaced the thermostat already Tried many times to bleed, but don't know if I got it bleed or not. Seen to many options to do it.

When the engine is hot or at temp the fan will run fast.

First thing I would do is check the fan to make sure both speeds are working properly. Then check the connectors and relays to make sure they're clean and fully seated.
