Default Loping Idle

This is post-head gasket replacement (2001 non-turbo):

I start her up, and it's ok.

Engine idles ok for moment, then starts "loping" badly. Bad enough it wants to die sometimes, unless I give it a bit of gas.

Also, if I open the radiator cap and watch the fluid, it is moving up and down all crazy, like 3-4 inches up and down, sloshing up out of the filler neck, etc.

I was trying to use the exhaust gas tester (where you put a suction on the filler and suck air into the tube and it turns yellow if there's combustion in the coolant). But the coolant just kept getting back to the top of the filler and sloshing around crazy.

What is going on here?

any check engine light?
any stored codes?
everything plugged in correctly? ...including hard to see EGR vacuum hoses and the egr transducer connector
any change with the IAC unplugged?
can you check for vacuum leaks?
is there enough slack in the throttle cable?

if you REEEALLY want to run the block test without fixing the idle, raise the RPM to 1500 or whatever the minimum it is to stabilize the hunting idle/wavy fluid fluctuation

+1 on vacuum / intake leak. A classic symptom.

thanks guys, these are so helpful, because I've been at this car so long I'm forgetting the basics!!

I did have codes: 1490 and 1495.

The first being low speed fan relay circuit condition. I have been noticing intermittent fan not turning on: would you guys says replace that relay? Or is it likely something else in the circuit? (I know from the relay terminals to the fan is ok, direct battery there will engage fan).

The second code is 1495: EVAP condition. So that could easily be something I didn't connect right and is the vacuum leak?

When I get back to the car I'll take a long look at the evap stuff, but does anyone have a suggestion where to start??

Isn't the 1495 code what you get when the gas cap's o-ring dries out and doesn't seal? EVAP refers to the evaporative emissions system- instead of having a vented gas cap that allows fuel vapors to escape to the atmosphere, the fuel vapor is routed to a charcoal canister where it is captured, then returned to the gas tank as it cools down.
My '06 threw the leaky o-ring code- I fixed it by cleaning up the o-ring, the rest of the gas cap, and the inside of the filler neck where the o-ring seats, and then spreading a -thin- coating of silicone grease on the o-ring. No more code.

Going back to your original problem, I'd be checking everything you had to disconnect in order to remove the cylinder head- every
hose, any intake manifold connections, anywhere that air might leak into the system.
