I think you should leave the windows open a little bit to let the hot air out of the cabin. This should be if you use the recirc or outside air as long as the cabin air is real hot.

I also have an 03GT and have parked it in the sun. I have never had to put it on recirc to get freezing cold AC out of the car. The temp will step down a little bit if you are just idling, but if you're actually driving the car, I always get freezing cold AC, and we had some HOT days here this summer.
