What about the Mitsubishi/Chrysler 2.5L V6 form the Dodge Stratus. If I'm gonna take the engine out of the car, I might as well see if the engine is compatible with the existing equipment in the PT and the weight should be about the same.

You can absolutely do the first option. Research the parts needed and the costs involved to make sure your up to it. But building the motor from the ground up is ideal. I couldn't do that with mine because I had to have the car back on the road within three weeks of tear down. If that's not a problem for you don't worry about it.
Personally, I think you're probably not understanding all the complexity involved in dropping a 2.7 or 2.5 V6 into a PT.....Have you looked under your hood lately? That engine bay is tight man! I couldn't even find a good place to mount my HID ballasts!
Doing a NA PT turbo kit would be WAY easier than doing a v6 swap IMO.
