It's not totally true about never loosing coolant. You do loose a small amount over time dur to evaporation from the coolant reservoir tank. If you let that go long enough it can cause problems. Any half way decent oil change place will refill the tank when you get your oil changed.

My 03 turbo overheated when it had just 500 miles on it.
I checked the coolant, it was fine, the radiator fan was working.
I had it towed to the dealer who kept it but could not recreate the
overheating condition. They changed the thermostat and gasket
because it might have been the problem. After I got the car back it never happened again.

you will loose a little because of evaporation but that is very little. the problem with long life coolant (the red stuff) is that it has small molecules which lets it "leak" internally or externally with such i small amount that it is burned in the engine or evaporates on the block or head. you can see it if you look at your engine and see a pink powder that is dry coolant. as a tech i have seen alot of them leaking around the t-stat housing the fix is to put a new t-stat in. it comes with the gasket on the t-stat you con not get it seperate
