Default MORE A/C issues

Brief history, from another thread - fan went bad. High pressure blew out compressor. Replace compressor with new Mopar, fan with Dorman. Worked great for a couple of days.

Started blowing hot air again. Found refrigerant low, and dye stains around pressure valve. Evacuated and filled system. Saw a spike to 500 psi on high-pressure side (yes, fan's working). Let system evacuate overnight, to make sure it was as uncontaminated as possible. Charged system. 300 psi on high-pressure side. Let idle for half hour with A/C on. Fan was on low speed the whole time. Pressure climbed to 400 psi, but no hgher.

So, three questions:

1) At what pressure will the relief valve on the high-side bleed pressure?
2) Is 400 psi too high (idling for 1/2 hour isn't something I'd normally do)?
3) Does anyone know at what temp the high-speed fan comes on? We can trigger it with the scan tool, but haven't seen it come on via sensor/PCM. Maybe it runs cool enough with the low-speed; gauge doesn't go above half, for what it's worth.

At what temps does the fan come on?

Yeah, I saw that when I did the search There seemed to be some uncertainty regarding the high-speed fan, so I was hoping someone would have a more definitive answer.
