Default Temperamental overheating

Hi still new here and still new to our lovely Cruiser 2 weeks now

However every so often it will overheat! No rhyme or reason to this problem if we set off sometimes within 2 miles it will overheat and then if we sit for even a minute and restart the engine the temp needle drops back to midway within seconds and will drive allday in either city or motorway conditions and some times if we start the engine it will overheat before we get to the end of the street and refuse to change!
Any ideas its a 2005 2.4 LTD petrol with 49000 miles on the clock!

Sounds like you might have a temperamental thermostat.
