Default Brake Fluid ?

Need to just top off my brake fluid. Can I use 'Dot 3' high temp synthetic ?

I have researched this very topic in the not so distant past, found that all DOT 3 brake fluid is synthetic, and a version stating "high temp dot 3" is compatible with all Dot 3 brake fluids. A google search will turn up a couple threads on "oil specific" forums that discuss at exhaustive length if interested in a long through read about it.

I think is says right there on top of the cap. I pretty sure it's just DOT 3. Both mine were.

Why is yours low? That's the first question you need to be asking. Check under the car on the back of your wheels. Maybe a brake hose or caliper/wheel cylinder leaking.

As you are checking your brake lines, i would also check the condition of your pads. As they wear, the pistons are extened more "consuming" the fluid from the resevoir.
