Welcome to the forum.

I would suggest first checking your fuel pressure. You should be getting 58 +/- 5 PSI.

a rough idle is normal on the GT models. could be also engine mounts...

While you're throwing parts at it, you might as well change the coolant temp sensor. I have a GT and it idles rough. I've tried all kinds of things and nothing has ever resolved it. It still runs like a bat out of hell and gets 22-25 mpg.

My rough idle is because of motor mounts. I'm not feeling any vibrations or roughness at any other time.
Question: At what point is it dangerous to not have them replaced, which is expensive? Or is it not dangerous at all?

It's a 2007 Convertible with about 113 thou miles on it.

Driving on worn or fractured upper and lower struts (engine supports) will cause failure to the lower engine mount which is very labor intensive to replace. $$$

As NitroPT said, it can lead to expensive repairs. If the torque struts are all that need replacing, they are about $10-$12 mail order or $30 is each at a local parts store and take maybe 1/2 to 1 hour to replace and align. Lots of Youtube videos will show you how to replace them but make sure you get the spacing set correctly once they are in and before you torque down the bolts.
