Default 17" & 18"

Besides the fact that I can't rotate them, is there any reason I can't use 17s up front and 18s in the rear? I like the raked look.

It can be done but there is a limit to how much of a difference can be front to back if you have traction control as on the GT's.

I have slightly different tires in the rear on my cruiser, front = 205/50-17, rear = 215/50-17 (approximately 2" more circumference).

The traction control will kick-in automaticlly to overcome what it "thinks" is a skid situation if the rotation is too widely different from the front to rear axle. Without T/C, you have a bit more latitude to play the big wheel game.

2step is right. You can confuse the traction control if you have staggered wheel sizes. I have a 2002 PT base model. It has no ABS/ tracton control fortunately (!?) which enables me to run 225-45-17 on a 17x7 front wheel and a 245-40-18 on an 18x8 rear, without braking problems. The sidewall height of the front tires are very close to stock height, so my speedometer isn't thrown off by much.
